Rhubarb offers a unique taste sensation to any drinking occasion. It is a refresher for spring and summer and a perfect ingredient which can be spiced up with warm and mellow winter tones. Bourbon or spiced rum makes for the perfect mellow ending to an evening, while the choices of classy Martini’s with simple – yet powerful – taste sensations in smooth vodka’s, indulgent rum, a cheeky Tequila or a burning Cachaca. The opportunities are endless.

Finalist recipees from the London Cocktail Week Competition ‘Rhuby – Pink Your Drink’ - enjoy

Something which is a great decorator and ‘swizzle stick’. Cut a few rhubarb stalks into thin and long mini-stalks. Dip them in whipped egg-white and roll into sugar. Let them dry. Looks like the perfect frosted natural swizzle stick to enjoy with your drink for added Rhubarb pleasure.

The Rhuby Basildon

Muddle fresh basil in a tumbler of your choice. Add plenty of crushed ice. Pour over generous amounts of Rhuby with a final top-up of Club Soda. Garnish with a Basil Leaf.

Rhuby Freeze

Place a few fresh strawberries, 3/5 Rhuby, 2/5 white rum and a dash cream into blender with ice. Pour up in tall glass and garnish with a fresh strawberry.

The Rhuby Crumble

Place 3/5 Rhuby and 2/5 vanilla vodka into shaker. Shake and pour into pre-chilled Martini cup. Garnish with an Almond Biscotti. Perfect drink instead of desert. If desired add a dollop of half-whipped cream to sink through the cocktail.

Spiced Rhuby Bellini

Prepare the mixture the day prior. The base is Rhuby, a small addition of stewed natural rhubarb (Bonne Mama Compote is a good substitute). If heating the Rhubarb yourself, add a cinnamon stick and coriander with a few cloves. It does work with the ingredients thrown in cold (e.g. vanilla sugar/extract, powdered cinnamon and coriander), while does not bring out the flavours to the same extent. Spice after your own choice but do not overpower the vanilla as Rhubarb is a delicate flavour. When serving add the mixture to a champagne flute and pour over Champagne. Garnish with a slice of pear.

Rhuby Passion

Pour 1/3 Pomegranate juice into shaker, 2/3 Rhuby. Add freshly squeezed lemon and shake vigorously. Pour into pre-chilled Martini Cup and Garnish with a red rose petal.

Rhuby Sour

Muddle Fresh strawberries. Pour over 2/4 of Rhuby and 2/4 of Bourbon (My favourite is Woodford Reserve). Garnish with a strawberry.

Rhuby Basilisk

Place fresh basil in shaker with 1 part Rhuby and 1 part vodka. Shake vigorously and pour into pre-chilled Martini cup. garnish with a Basil leaf.

Rhuby Cosmopolitan

2/4 Vodka, 1/4 Rhuby, 1/4 Cranberry. Squeeze of fresh lemon juice. Shake over ice and pour into pre-chilled Martini cup. Garnish with ‘flamed’ orange peel.
