Naomi Fletcher - London based, appearing with a formal – all British – entrance. once behind the bar at the LCC she sparked into character with energy and well timed jokes. In-between the lines she perfectly presented cocktail history and product credentials, demonstrating an in-depth classic bartending skill.
Her warm character and fun approach to cocktail making came across imminently with the name of her Rhuby signature – The Flip.
Flipping the meaning of the rhubarb and custard sweet and the sweet bag being flipped – a flip on a flip.
Talking us through her entire process in well chosen vocabulary and demonstrating precision and personality she combined:
50ml Rhuby Liqueur
25ml Arette Blanco Tequila
10ml Vanilla Syrup
2 dashes Angostura Bitters
1 whole egg
Small piece of lemon zest
Combine all ingredients in a Boston shaker and shake dry. Then shake again with ice. Double strain into chilled sours glass and serve straight up. Garnish with grated nutmeg.
Having managed to replicate the popular rhubarb and custard sweet in an elegant and mature liquid fashion she went on with the Aviation, replacing the Maraschino with Rhuby while telling the entire history of the who, why, where, when and what of the Aviation history from 1911.
To top it all – her signature cocktail demonstrated a balanced, complex and smooth Hackney Sam with a Chivas 12 base and judges laughing out loud at British wit and personality.
